Because it takes place in the lost city of Atlantis.
Basically, the story is thatthe people of Atlantis were actually this really high-tech race called the Ancients. Atlantis was a city they built that they actually used to transport themselves to another galaxy, the Pegasus Galaxy, because they had completely settled our galaxy and needed to expand to other ones. When they got to the Pegasus Galaxy they encounted a race called the Wraith that wiped them all out, and a virus (probably created by the Wraith) killed the rest of the Ancients still in our Galaxy.
So in the show the characters find an outpost of the Ancients a mile under the ice in Antarctica, and instructions to Atlantis in the Pegasus Galaxy. So they go there to explore and learn more about the Ancients. Of course, they also run into the Wraith. And that's the premise of the show.

Yeah, it's based on the legend of Atlantis. Apparently, once Atlantis was under siege, the surviving Ancients went to earth to finish their lives.
That's how the legend of Atlantis came to be known on earth.

Stargate the Movie was related more to the Ancient Egyptian Pyramids. And so did the show for a while, before they moved on. In the last couple of seasons, the SGC realized that the Ancients lived in the lost city of Atlantis an thought they could find the Ancients there.
So yeah, it's a recent thing.

Yeah, Stargate was originally based on ancient Egyptian mythology, but it slowly expanded to include pretty much every myth on Earth. The Atlantis mythology is just the latest addition. Basically, in the Stargate universe everything in mythology happened, only instead of gods doing it they were highly advanced alien races (the Goa'uld, the Asgard, etc.) that primitive humans perceived as gods.

Why is most of the Ancients technology based on using your mind?

I'm not sure. It has something to do with possessing a gene that allows you to control some Ancient technology. It's a very rare gene among humans, but apparently most of the Ancients had it.
But I think the mind thing might just be for speed. If you want to do something it's a lot faster to think it than to physically do it. So the Ancients probably developed that kind of technology because it was really, really fast. They might have even invented the gene that allowed people to control it. Then they could keep it out of enemy hands.
But I don't know. It's just a sci-fi thing they made up.
